  • 1 lb mixed vegetables (such as broccoli, carrots, bell peppers, zucchini, mushrooms, snow peas)
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • Oil for cooking

Instructions

Follow these simple steps to prepare your Chicken with Mixed Vegetable Stir Fry:

1. Marinate Chicken

In a bowl, combine the sliced chicken breast with water, apple cider vinegar, Kosher salt, and baking soda. Mix until the liquid is absorbed by the chicken. Next, add cornstarch and neutral oil, mixing well to ensure even coating. Allow the chicken to marinate for 10-15 minutes.

2. Prepare Sauce

In a separate bowl, whisk together all the sauce ingredients—water, soy sauce, sugar, cornstarch, and sesame oil—until you achieve a smooth consistency. Set this aside for later use.

3. Blanch Vegetables

Bring a pot of water to a boil and add your mixed vegetables. Cook them until they are just tender, about 2-5 minutes, depending on the type of vegetable. Drain the vegetables and set them aside.

4. Cook Chicken

Heat oil in a wok or large skillet over medium-high heat. Add the marinated chicken and cook until it is fully done, approximately 5-7 minutes. Once cooked, remove the chicken from the pan and set aside.

5. Stir Fry
