Chicken Marinade

- 200 ml buttermilk (or milk + lemon juice)
- 1 egg
- 15 g honey
- 6 g salt

- 2 g cayenne pepper (or paprika for less heat)
- 2 g black pepper
Flour Coating
- 150 g flour
- 50 g cornstarch
- 3 g garlic powder
- 3 g onion powder

- 3 g salt
- 3 g icing sugar
Sticky Sauce
- 75 g butter (or plant-based butter)
- 60 g honey
- 75 g chili sauce
- 15 g sambal (or hot sauce)

- 150 g mayonnaise
- 75 g chili sauce

Instructions
1. Marinate Chicken
- In a large bowl, combine buttermilk, egg, honey, salt, and all the spices.
- Cut the chicken fillet into desirable pieces and immerse them in the marinade.
- Cover the bowl and refrigerate it for at least 30 minutes, allowing the flavors to meld.
2. Prepare Flour Coating
- In a separate bowl, mix together the flour, cornstarch, garlic powder, onion powder, paprika, cayenne pepper, salt, and icing sugar.
3. Coat Chicken
- Remove the marinated chicken from the refrigerator.
- Dredge each piece thoroughly in the flour mixture, ensuring an even coating.
- For an extra crispy texture, repeat the coating process for a double layer.
4. Make Sauce
- In a saucepan, melt the butter over low heat.
- Stir in the honey, chili sauce, and sambal (or hot sauce) until well combined, creating a sticky, flavorful sauce.
5. Fry Chicken
- Heat oil in a frying pan to approximately 175°C (347°F).
- Fry the coated chicken pieces for about 3 minutes on each side, or until they achieve a golden, crispy crust.
- Remove the chicken and let them rest on paper towels to absorb excess oil.
6. Combine
- Place the fried chicken in a large bowl.
- Pour the sticky sauce over the chicken, tossing gently until each piece is evenly coated with the sauce.
7. Toast Buns
- Lightly toast the burger buns in a pan with a dab of butter for added flavor and texture.
8. Assemble
- Spread mayonnaise and chili sauce on each bun.
- Place the coated crispy chicken on the bun.
- Top with fresh salad and the other half of the bun.
