Sticky Crispy Chicken Burger

To create this mouthwatering dish, you’ll need the following ingredients:

Chicken Marinade

  • 400 g chicken fillet
  • 200 ml buttermilk (or milk + lemon juice)
  • 1 egg
  • 15 g honey
  • 6 g salt
  • 5 g garlic powder
  • 4 g paprika
  • 5 g onion powder
  • 1 g dried parsley
  • 2 g cayenne pepper (or paprika for less heat)
  • 2 g black pepper

Flour Coating

  • 150 g flour
  • 50 g cornstarch
  • 3 g garlic powder
  • 3 g onion powder
  • 4 g paprika
  • 2 g cayenne pepper
  • 3 g salt
  • 3 g icing sugar

Sticky Sauce

  • 75 g butter (or plant-based butter)
  • 60 g honey
  • 75 g chili sauce
  • 15 g sambal (or hot sauce)

For Serving

  • 150 g mayonnaise
  • 75 g chili sauce
  • Salad
  • Burger buns

Instructions

1. Marinate Chicken

  1. In a large bowl, combine buttermilk, egg, honey, salt, and all the spices.
  2. Cut the chicken fillet into desirable pieces and immerse them in the marinade.
  3. Cover the bowl and refrigerate it for at least 30 minutes, allowing the flavors to meld.

2. Prepare Flour Coating

  1. In a separate bowl, mix together the flour, cornstarch, garlic powder, onion powder, paprika, cayenne pepper, salt, and icing sugar.

3. Coat Chicken

  1. Remove the marinated chicken from the refrigerator.
  2. Dredge each piece thoroughly in the flour mixture, ensuring an even coating.
  3. For an extra crispy texture, repeat the coating process for a double layer.

4. Make Sauce

  1. In a saucepan, melt the butter over low heat.
  2. Stir in the honey, chili sauce, and sambal (or hot sauce) until well combined, creating a sticky, flavorful sauce.

5. Fry Chicken

  1. Heat oil in a frying pan to approximately 175°C (347°F).
  2. Fry the coated chicken pieces for about 3 minutes on each side, or until they achieve a golden, crispy crust.
  3. Remove the chicken and let them rest on paper towels to absorb excess oil.

6. Combine

  1. Place the fried chicken in a large bowl.
  2. Pour the sticky sauce over the chicken, tossing gently until each piece is evenly coated with the sauce.

7. Toast Buns

  1. Lightly toast the burger buns in a pan with a dab of butter for added flavor and texture.

8. Assemble

  1. Spread mayonnaise and chili sauce on each bun.
  2. Place the coated crispy chicken on the bun.
  3. Top with fresh salad and the other half of the bun.
