  • 4 salmon fillets (7 oz each), skin removed
  • 2 tbsp avocado or olive oil
  • Salt and pepper, to taste
  • ½ tsp smoked paprika
  • 1 tsp Cajun seasoning
  • 4 oz thawed frozen spinach, excess liquid squeezed out
  • 5 oz Boursin Shallot & Chive cheese, softened
  • 1 jalapeño, deseeded and diced
  • 8 oz lump crab meat
  • ¼ cup grated Parmesan cheese
  • 2 tsp minced garlic
  • 1216 medium shrimp, peeled and cleaned
  • Lemon wedges, for serving

Cajun Butter Sauce

  • 2 tbsp unsalted butter, melted
  • Juice of 1 lemon
  • ¼ tsp Cajun seasoning
  • ¼ tsp smoked paprika

Instructions

Creating this dish is simpler than you might think. Follow these steps to bring your Crab and Shrimp Stuffed Salmon to life:

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.

Step 2: Prepare the Salmon

  1. Drizzle the salmon fillets with 1 tbsp of oil.
  2. Season them with saltpeppersmoked paprika, and Cajun seasoning.
  3. Cut a slit in the middle of each fillet, ensuring it’s about two-thirds deep, to create a pocket for the stuffing.

Step 3: Make the Stuffing

  1. In a bowl, combine the following ingredients:
    • Spinach
    • Boursin cheese
    • Jalapeño
    • Crab meat
    • Parmesan cheese
    • Garlic
  2. Season the mixture with salt and pepper to taste, then mix well.

Step 4: Season the Shrimp

  1. In another bowl, toss the shrimp with:
    • Remaining 1 tbsp of oil
    • Cajun seasoning
    • Smoked paprika
    • Salt and pepper

Step 5: Assemble the Dish

  1. Stuff each salmon fillet with the crab mixture.
  2. Top with the seasoned shrimp.
  3. Place the stuffed fillets on the prepared baking sheet.

Step 6: Prepare the Cajun Butter Sauce

  1. In a small bowl, mix together:
    • Melted butter
    • Juice of 1 lemon
    • Cajun seasoning
    • Smoked paprika
  2. Drizzle the Cajun butter sauce over the stuffed salmon fillets.

Step 7: Bake

  1. Bake for 15-17 minutes or until the salmon is cooked through and flaky.

Step 8: Serve

  1. Serve the salmon fillets with lemon wedges for a fresh, zesty finish.
