- 4 oz thawed frozen spinach, excess liquid squeezed out
- 5 oz Boursin Shallot & Chive cheese, softened
- 1 jalapeño, deseeded and diced
- 8 oz lump crab meat
- ¼ cup grated Parmesan cheese
- 2 tsp minced garlic
- 12–16 medium shrimp, peeled and cleaned
- Lemon wedges, for serving
Cajun Butter Sauce
- 2 tbsp unsalted butter, melted
- Juice of 1 lemon
- ¼ tsp Cajun seasoning
- ¼ tsp smoked paprika
Instructions
Creating this dish is simpler than you might think. Follow these steps to bring your Crab and Shrimp Stuffed Salmon to life:
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
Step 2: Prepare the Salmon
- Drizzle the salmon fillets with 1 tbsp of oil.
- Season them with salt, pepper, smoked paprika, and Cajun seasoning.
- Cut a slit in the middle of each fillet, ensuring it’s about two-thirds deep, to create a pocket for the stuffing.
Step 3: Make the Stuffing
- In a bowl, combine the following ingredients:
- Spinach
- Boursin cheese
- Jalapeño
- Crab meat
- Parmesan cheese
- Garlic
- Season the mixture with salt and pepper to taste, then mix well.
Step 4: Season the Shrimp
- In another bowl, toss the shrimp with:
- Remaining 1 tbsp of oil
- Cajun seasoning
- Smoked paprika
- Salt and pepper
Step 5: Assemble the Dish
- Stuff each salmon fillet with the crab mixture.
- Top with the seasoned shrimp.
- Place the stuffed fillets on the prepared baking sheet.
Step 6: Prepare the Cajun Butter Sauce
- In a small bowl, mix together:
- Melted butter
- Juice of 1 lemon
- Cajun seasoning
- Smoked paprika
- Drizzle the Cajun butter sauce over the stuffed salmon fillets.
Step 7: Bake
- Bake for 15-17 minutes or until the salmon is cooked through and flaky.
Step 8: Serve
- Serve the salmon fillets with lemon wedges for a fresh, zesty finish.
