Ingredients
This recipe is wonderfully forgiving and uses ingredients you likely already have in your pantry. Here’s what you’ll need to create your own mug cake masterpiece:
- All-Purpose Flour: (1/4 cup) The foundation of our cake, providing structure and texture. You can also use gluten-free blends for dietary needs, just be sure to choose one that’s designed for baking.
- Granulated Sugar: (2 tablespoons) Sweetness is key! Granulated sugar adds the perfect level of sweetness and helps with browning in the microwave. You can adjust the amount to your preference; brown sugar can also be used for a slightly richer flavor.
- Cocoa Powder: (2 tablespoons) Unsweetened cocoa powder gives our mug cake that rich, chocolatey depth. For a more intense chocolate flavour, try dark cocoa powder.
- Baking Powder: (1/4 teaspoon) The magic ingredient that makes our cake rise and become light and fluffy. Don’t skip this!
- Salt: (a pinch) Just a tiny pinch of salt enhances all the other flavours and balances the sweetness.
- Milk: (3 tablespoons) Adds moisture and binds the dry ingredients together. You can use dairy or non-dairy milk alternatives like almond milk, soy milk, or oat milk.
- Vegetable Oil: (2 tablespoons) Contributes to a moist and tender cake. Melted coconut oil or melted butter can also be used for different flavour profiles.
- Vanilla Extract: (1/4 teaspoon) Enhances the overall flavour and adds a touch of warmth. Pure vanilla extract is best, but imitation vanilla will also work in a pinch.
- Chocolate Chips: (2 tablespoons) The star of the show! Semi-sweet chocolate chips are classic, but feel free to experiment with milk chocolate, dark chocolate, or even white chocolate chips. Mini chocolate chips distribute more evenly throughout the cake.
Instructions
Making this chocolate chip mug cake is incredibly simple, even if you’re a complete beginner in the kitchen. Follow these easy steps for a perfect single-serving dessert:
- Prepare Your Mug: Choose a microwave-safe mug that’s at least 10-12 ounces in size. This gives the cake room to rise without overflowing. Lightly grease the inside of the mug with butter or cooking spray. This helps prevent the cake from sticking and makes for easier cleanup.
- Combine Dry Ingredients: In your prepared mug, add the all-purpose flour, granulated sugar, cocoa powder, baking powder, and salt. Use a fork or small whisk to thoroughly combine these dry ingredients. This step is important to ensure the baking powder and cocoa powder are evenly distributed throughout the flour, which leads to a better texture and rise.
- Incorporate Wet Ingredients: Add the milk, vegetable oil, and vanilla extract to the mug. Using your fork or whisk, mix everything together until just combined. Be careful not to overmix; just stir until the dry ingredients are moistened and you have a smooth batter. A few small lumps are okay, but avoid excessive mixing as it can develop the gluten in the flour and make the cake tough.
- Fold in Chocolate Chips: Gently fold in the chocolate chips. Distribute them evenly throughout the batter. Resist the urge to add too many chocolate chips at this stage, as they can sink to the bottom and burn in the microwave. You can always add more on top after baking!
- Microwave to Perfection: Place the mug in the microwave and cook on high power for 60-90 seconds. Cooking times can vary depending on your microwave’s wattage, so start with 60 seconds and check for doneness. The cake is ready when it’s mostly set in the center, but still slightly moist. It’s okay if it jiggles a little, as it will continue to cook from residual heat. Be careful not to overcook, as it can become dry and rubbery.
- Cool Slightly and Enjoy: Carefully remove the hot mug from the microwave (use oven mitts or a towel!). Let the mug cake cool for a minute or two before digging in. This allows it to set slightly and prevents burning your tongue. Enjoy your warm, gooey chocolate chip mug cake straight from the mug!
