For the Dough:
- 340g flour
- 200g soft butter
- 100g sugar
- 1 packet vanilla sugar
- 1 egg
- 1 tablespoon cocoa powder
For the Filling:
- 200g white chocolate, finely chopped
- 100ml cream
- 300g sieved cherry jam or jelly
- Optional: 1-2 tablespoons cherry syrup

- 100g milk or dark chocolate
- A small handful of chopped dark chocolate for sprinkling

1. Make the Dough
- In a bowl, combine flour, butter, sugar, vanilla sugar, egg, and cocoa powder. Mix until well combined.
- Wrap the dough in cling film and refrigerate for 30-60 minutes. This helps the dough firm up, making it easier to handle.
2. Prepare the Filling
- Heat the cream until it begins to boil. Pour it over the chopped white chocolate.
- Stir until the mixture is smooth, then let it chill for a few hours until firm.
3. Preheat the Oven
- Set your oven to 160°C for fan ovens or 180°C for conventional ovens.
4. Shape the Cookies
- Roll out the chilled dough and cut it into circles.
- Make small holes in half of the circles to create a “window” for the filling.
- Place the cookies on a lined baking tray and bake for 10-12 minutes. Allow them to cool completely.
5. Dip the Cookies
- Melt the dark chocolate.
- Dip the cookies with holes into the chocolate, then sprinkle with the chopped dark chocolate. Allow them to set.
6. Add the Filling
- Whip the chilled white chocolate cream until fluffy.
- Pipe the cream onto the solid cookies, leaving the center open.
- Mix the cherry jam with cherry syrup (if using) and warm it slightly. Fill the center of the cookies with the jam mixture.
